Tawa Jhinga – Experience the taste of Benares at home
‘Tawa’ in the Hindi title indicates griddle cooking, carried out on a large, flat iron disc. Tawa cooking is popularly known as ‘tak-a-tak’ cooking in northern India & Pakistan – as it describes the rhythmic sound of ingredients being sautéed on the griddle.
This is a particularly good recipe for sampling the Benares experience at home. It has beautiful spicing, balanced flavours & perhaps most important for home cooks, is easy to execute!
