No beverage more than wine can give you a feeling of aromatic and tactile harmony, When matched with Indian cuisine the combination evolves into a truly new and exciting experience.
Pairing wine with aromatic and spicy food can be done in one of two ways:
PAIRING BY CONTRAST: the wine brings to the food characteristics it doesn’t have and vice versa. This is particularly advisable if you are not used to the heat of Indian cuisine, in order to soften and refresh the palate.
PAIRING BY RESEMBLANCE: The wine and food have the same characteristics and the fusion combines to the same sensation. The wine in this case will reinforce the aromas and the piquante palate feeling. Please note that tannins and higher degree of alcohol will increase this process while, a good level of acidity or fruitiness can counter balance the burning sensation.
